2014 Caprice - Looking to remove one engine cooling fan from computer control to temp switch control.

Under advisement of my Tuner (better performance with a colder thermostat) And I generally don't like my cars so hot anyway I put a 160 Thermostat but my fans do not come on until 196 or whatever is stock setting,
I looked around on HP tuners and the word is that these cars can NOT be programed to turn on the fans colder than the OE minimum of 192* the problem I have is that I am not liking the extreme constant swing in temps of my car.
For example I am in the northeast so right now its 30* out -- I hit the hwy and the car settles at 176* cruising but when I hit the side roads and traffic it swings up to 203* and this cycle continues depending on traffic conditions.
My plan is to remove one fan or both fans from the ECM and add a 180 switch to the engine block/water pump(wherever I can that works) for temperature control and also tap into the high side AC switch for AC over ride.
Will this cause a problem with the ECM/tune when it sees temps lower than commanded?

Anyone else try something like this??

you do know , these cars were made to run these high temps

the oil needs 180 degrees + to burn off the contaminants , the cooling system itself is made to work with a 160 t-stat , and to make things worse you live in a cold climate

temps in my 14 are constant , and never overheats and i like in hellizona

which is why I mentioned the 180* switch setting or an adjustable switch.
My target would be something like 185 high to 180 low or as close to that as possible.
Figure -- yesterday was 28* outside and the car never dropped below 176 light cruising on the hwy so with a 185 on the high side it would only be a 10 degrees swing verses a 27* swing.

Played with the fan settings
first 3 boxes.
30 35 40 % and it seems to be working. I'll keep you guys posted.
